The most spectacular vistas (especially at night!) are from Victoria Peak – easily reached by funicular railway and with dancing fountains, shopping gallery and waxworks at the top.
Alternatively, for a ringside view of the skyline, take the Star Ferry to Kowloon and Tsim Sha Tsui Promenade, with the Cultural Centre, Space Museum and Museum of Art all nearby.
